4 Crockpot Freezer Recipes - 7 Meals in 1 and a Half Hours!

Buy chicken when it goes on sale and make these chicken crockpot freezer meals!

Meijer was having a (small) sale on boneless chicken breasts ($2.50 instead of the usual $2.99); nothing exciting but I also had a $10 coupon for filling my prescription at Meijer, and I scored another $1.50 Catalina coupon for any meat purchase over $10, because someone left it behind at the self-checkout on earlier in the week. (Catalina coupons are those store coupons that print at the register when you leave). Overall, I was able to snag 2 giant packs of boneless skinless chicken breasts for roughly $17 for 11 pounds of chicken!

Chicken Crockpot Freezer Meals

All recipes can be cooked from frozen on low for 8 hours. If you have less than 8 hours, cook on medium for 6 hours or high for 4 hours.

Write on the bags before filling.

TIPS: You must blanch carrots before freezing them. Potatoes & mushrooms do not freeze well. Onions & celery freeze fine raw. Cloves, pepper, garlic, celery become stronger when freezing. Onion, salt, chili pepper weaken with time in freezer. Do not freeze uncooked rice, milk products, mayonnaise or sour cream (creamed soups are okay to freeze, as are diced tomatoes). Crush garlic using a meat tenderizer, or hammer!

Chipotle Lime Chicken (Freezer, Crockpot)

4 large pieces of chicken
1 sliced onion
1 cup chopped celery
1 cup chopped carrots (BLANCH CARROTS to freeze them). Read how, below.
Salt and pepper
1 can tomato sauce
1/4 cup lime juice
1 tbsp miced chipotle chilis (skipped)
2 garlic cloves crushed
1/4 cup cilantro
Split all ingredients into two bags.

Freezer Bag Directions: Cook from frozen on low 8 hours. Serve with avocado, over rice or noodles.

Honey Sesame Chicken (Freezer, Crockpot)

4 large pieces of chicken
salt and pepper
1 1/2 cup honey
1 cup soy sauce
1 sliced onion
1/2 cup ketchup
4 tbsp olive oil
4 garlic cloves crushed
1/2 tsp red pepper flakes
Split the chicken, onions, garlic, red pepper, and salt & pepper between 2 bags. Combine honey, soy sauce, ketchup, & oil. Split the liquid honey mixture between the 2 bags.

Freezer Bag Directions: Cook from frozen on low for 8 hours. Serve with brown rice & broccoli. Add cornstarch/water to thicken sauce. Add sesame seeds. Shred chicken into pieces.
(4 tsp cornstarch dissolved into 6 tbsp water, if you need a guide)

Brown Sugar Chicken (Freezer, Crockpot)

4 large pieces of chicken
1 cup brown sugar
2/3 cup vinegar (white, apple cider vin, red wine vin, balsamic)
4 garlic cloves crushed
2 tbsp soy sauce
Pepper to taste
Split all ingredients into two bags.

Freezer Bag Directions: Add 1/8 cup Sprite when ready to cook. Cook from frozen on low for 8 hours.

White Chicken Chunky Chili (Freezer, Crockpot)

4 large pieces of chicken
2 cans white beans (cannelini, northern, etc) drained
2 cups corn (canned or frozen)
2 cups chicken broth
1 sliced onion
4 garlic cloves crushed
4 tsp oregano
2 tbsp cumin
1 tsp cayenne pepper
1 tsp white pepper
1 tsp Tabasco sauce, or 1 jalapeno (chopped, seeds removed for less heat), or 1 can green chilies
6 tbsp flour
Salt and pepper to taste
1 tbsp. olive oil
Split all ingredients between 2 bags. All canned ingredients can be frozen. Flour can be frozen.

Freezer Bag Directions: Cook from frozen on low for 8 hours. Add 1 cup whole milk. Add cornstarch/water to thicken as desired. Garnish with tortilla chips, cheese, avocado, sour cream, cilantro, salsa, etc.

How to close the bags. Great Tip for getting more air out of the freezer bags, without a fancy tool!

When the bags are ready to be sealed, fill the sink with water and slowly lower the bag into the water up to the zipper. Close the zipper without getting water inside. The water pressure will exert the air out of the bag no problem! Easy peasy!

How much do the recipes make?

There are 2 large boneless pieces in each freezer bag I made pictured below (roughly 2 pounds). The recipe’s amounts stated here is the amount you will make if you are using 4 boneless chicken breasts (roughly 4 pounds of meat). I split the 4 pieces of chicken between 2 freezer bags – because our family is small. Each recipe below gave me 2 freezer meals. (If your family needs all 4 pieces of chicken for each meal, you will get 4 freezer meals).

How to BLANCH CARROTS for freezer cooking

  1. Just bring a LARGE pot of water to a RAPID boil (2 to 3x more water than carrots, or else the boiling dissipates when you add the carrots)
  2. Add the carrots and set a timer for 5 minutes, at a boil. No more than 7 minutes at the most!
  3. While the carrots are boiling, fill a sink or bowl with ice water, and have it ready for immediate transfer.
  4. When the timer goes off, taste a carrot – they should be bright orange in color and should be somewhat soft, but with a slight crunch to the center of them still.
  5. Immediately after boiling DRAIN the carrots, and then add them to a sink full of ice water for at least 5 minutes (the same amount of time they were boiled for).
  6. This slows the enzymes from changing the color and taste and texture of the carrots when they are frozen.
  7. Put the carrots in a single layer in the freezer until they are frozen solid (about 1/2 hour) and then put them in a ziplock bag in the freezer for use on busy nights, or for use in crockpot freezer meals!
